  • 1 can (14 oz) coconut milk
  • 1 cup chicken broth
  • 1 tablespoon soy sauce
  • 1 tablespoon brown sugar
  • Salt and pepper to taste
  • Fresh cilantro, for garnish
  • Cooked rice, for serving

Instructions

  1. Heat the vegetable oil in a large skillet over medium heat. Add the chopped onion and sauté until translucent.
  2. Add the minced garlic and grated ginger, cooking for an additional minute until fragrant.
  3. Stir in the chicken pieces and cook until they are browned on all sides.
  4. Sprinkle in the curry powder and ground cumin, stirring well to coat the chicken.
  5. Pour in the coconut milk and chicken broth, then add soy sauce and brown sugar. Stir to combine.
  6. Bring the mixture to a simmer, then reduce the heat to low and let it cook for about 20 minutes, or until the chicken is tender and the sauce has thickened slightly.
  7. Season with salt and pepper to taste. Serve over cooked rice and garnish with fresh cilantro.
