  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds. Place them in a baking dish, cut side up.
  2. In a medium saucepan, bring the vegetable broth to a boil. Add the quinoa, reduce the heat to low, and cover. Cook for about 15 minutes or until the liquid is absorbed. Remove from heat and fluff with a fork.
  3. In a large bowl, combine the cooked quinoa, cherry tomatoes, red onion, black olives, feta cheese, olive oil, oregano, garlic powder, salt, and pepper. Mix well.
  4. Spoon the quinoa mixture into each bell pepper, packing it tightly. Cover the baking dish with foil and bake for 30 minutes.
  5. Remove the foil and bake for an additional 10-15 minutes, until the peppers are tender. Garnish with fresh parsley before serving.
